Directions
Step 1
Toss ribs with olive oil, garlic, rosemary, salt and pepper. Make 2 foil packs for ribs by using double sheets of heavy-duty foil for each pack (sheets need to be large enough to wrap around ribs plus apples and onions). Set half the sliced apples and onions onto the centre of each set of sheets. Divide the ribs between the 2 packs, on top of apples and onions. Double-fold sides and tops of foil edges to seal packs, leaving room for heat circulation inside.
Step 2
Place packs on grill, preheated to medium, for 50 to 60 min. or until ribs are tender. Remove ribs from foil packs, reserving apple mixture. Return unwrapped ribs to grill for another 10 min., turning and basting with barbecue sauce.
Step 3
In food processor, puree reserved apple mixture until almost smooth. Serve as dipping sauce for ribs.
